Ready to Eat Fresh Meat

Cooling

Cooked lobster is immediately cooled in ice water.

Meat Removal

Meat is picked from the shell by hand.

Weighing

Meat is packaged in bags and weighed.

De-Boning

All meat is also deboned and checked for loose shell pieces by hand.

Finished Product

Fresh meat is vacuum sealed and placed on ice.

Frozen Tails

Lining Up Tails

Tails are graded and lined by hand.

Freezing

Lined lobster tails are sent through our nitrogen tunnel.

Frozen Tails

Frozen tails exit the tunnel.

Glazing

The tails are glazed with fresh water.

Finished Product

Frozen tails are packaged and sent to our freezer.
